From ingredient advances to AI-powered solutions, pulses are finding new opportunities beyond their traditional applications. At the same time, consumer demand for nutrition, functionality and transparency continues to influence product development across the value chain.
The Food Innovation discussion highlighted a significant shift in how pulse-based ingredients are being positioned in the marketplace. Rather than focusing primarily on sustainability or plant-based meat alternatives, experts pointed to rising consumer interest in protein, wellness and healthy aging as increasingly important demand drivers. They suggested that this trend is expanding opportunities for pulse proteins across a broader range of products, including beverages, snacks, cereals and fortified everyday foods.
Participants also emphasized the importance of continued innovation to unlock future growth. Improvements in flavor and functionality, investments in traceability systems and the growing use of artificial intelligence in farming, processing and product development were all identified as key areas of progress. While acknowledging recent challenges in parts of the alternative protein sector, speakers expressed optimism that expanding demand in major markets such as India and China, combined with ongoing technological advances, could support a new phase of growth for pulse-based ingredients.
